SANTO DIABLO MEZCAL

SANTO DIABLO is a reflection of the beauty of the land it originates from and the passion of the Juan Martinez family who have been producing mezcal in the highlands of San Juan del Río, Oaxaca since the early 1900’s.

INDIGENOUS TO THE MOUNTAINS OF OAXACA, this sustainably grown Agave Espadin is left to mature for up to 10 years to reveal its deep and complex flavors. The piñas are cooked in an underground earthen pit made of volcanic rock and wood, allowing the piñas to slowly roast and release a subtle caramelization and smoky aroma. Once they are properly cooked, they are moved to an open tank of wood to ferment for up to two weeks. When fourth generation Master Mezcalero Don Adolfo Martinez feels it’s ready, the liquids and solids are removed and then moved to small copper pots for a second distillation lasting two hours. This artisanal practice of twice distilling and using Encino wood allows for the rich, complex flavors of the authentic Mezcal to be enjoyed.

WOMEN OF MEZCAL

WOMEN OF MEZCAL

FEMALE RUN Santo Diablo Mezcal was founded by a woman and is owned and operated by women. Brand owners Karla Amtmann, Sara Semprini of Semprini Creative, Inc. and Maria Dillingham bring over thirty years of spirits experience and believe women supporting women should be the primary ethos of the Santo Diablo culture.

MUJERES DE SOL Y AGAVE Santo Diablo is passionate and actively involved with the organization Mujeres de Sol y Agave (Women of the Sun and Agave). This foundation was born from a concern of women for women. Mujeres de Sol y Agave's mission is to support young Mexican women to achieve their empowerment and fullness through preparatory and professional education. These young women, as a metaphor of the sun or agave plant, are the essence of Mexico that is most powerful, noble, and vital, and who will silently nourish the valuable Mexican culture.
